Baked Salmon with Quinoa & Japanese Sweet Potato

Easy Preparation

Duration: less than 30min

Ingredients

200g Salmon

Chopped 1tsp garlic & 1tsp onions

Thyme & Sage

Pinch of Pepper and Salt

Olive oil

Half Sweet Potato, cube

1/2 cup quinoa

Any green to go with

Method

  1. Rub olive oil, garlic, onion, herbs, salt & pepper over salmon. Wrapped all in baking paper and rest in fridge for at least 30min.

  2. Preheat oven 180°c

  3. Boil quinoa in small pot of boiling water until soft, drain and set aside.

  4. Place cube sweet potato onto baking tray.

  5. Remove salmon from fridge, open the baking paper (leaving fish and all marinate inside) & place next to the sweet potato.

  6. Bake all in oven for 15min.

  7. Mix baked sweet potatoes with quinoa.

  8. Place green on plate.

  9. Place quinoa and sweet potatoes on top of green

  10. Place Salmon on top of quinoa. Drizzle the juice over the salmon.
